Pallars mountain cooking
If anything defines the local cuisine, it's seasonal mountain produce: wild mushrooms (bolets) in autumn, grilled meats, hearty stews like cassola de tros or escudella barrejada, and traditional sausages like girella. Many of the restaurants on this list pour wines from the DO Costers del Segre, a designation that includes the Conca de Tremp.
